Direct proof of use
The Nimitz-class aircraft carrier is documented in the 2003 Iraq War through USS Theodore Roosevelt (CVN-71), which the U.S. Navy identifies as the fourth Nimitz-class nuclear-powered aircraft carrier. Carrier Air Wing Eight's official command history says the Theodore Roosevelt/CVW-8 team deployed to the Mediterranean in January 2003 and participated in Operation Iraqi Freedom combat operations.
The same Navy command history records more than 1,000 sorties, 5,000 flight hours, and more than 1,000,000 pounds of precision-guided weapons delivered by the Theodore Roosevelt/CVW-8 team during that 2003 deployment.

A GlobalSecurity chronology, drawing on contemporary deployment reporting, records Theodore Roosevelt and Carrier Air Wing Eight launching their first Operation Iraqi Freedom strikes on 22 March 2003. It also records the strike group returning to Norfolk at the end of May 2003.

Narrative
In the 2003 Iraq War, the Nimitz-class role was not a single weapon release by the ship itself but the use of a nuclear-powered carrier as a mobile air base for U.S. Navy carrier aviation. USS Theodore Roosevelt carried Carrier Air Wing Eight, whose aircraft conducted strike and support sorties from the eastern Mediterranean during Operation Iraqi Freedom.
A Defense Department archival story posted by DVIDS on the 12 April 2003 air campaign identified Roosevelt among five U.S. carriers then deployed in the Persian Gulf or eastern Mediterranean and reported that carrier-based aircraft had flown more than 7,000 sorties in support of Operation Iraqi Freedom since 20 March. That context places Theodore Roosevelt within the wider coalition carrier force while the Navy's CVW-8 history provides the ship-specific sortie, flight-hour, and precision-weapons totals.
