Direct proof of use
The MiG-29 is directly documented in the 1990 Gulf War through Iraqi Air Force air-to-air combat during Operation Desert Storm. Smithsonian's National Air and Space Museum describes a January 19, 1991 defensive mission in which Capt. Cesar Rodriguez's F-15C encountered incoming Iraqi MiG fighters, including a MiG-29 that locked on to Rodriguez before Capt. Craig Underhill fired an AIM-7 Sparrow that struck the MiG-29.
Air & Space Forces separately ties the same Gulf War aircraft and pilot to an Iraqi MiG-29 loss, stating that Rodriguez brought down a MiG-29 and a MiG-23 while serving with the 33rd Tactical Fighter Wing's 58th Tactical Fighter Squadron during Operation Desert Storm.

January 19 engagement
The documented MiG-29 event occurred three days after the official start of the Gulf War air campaign. Smithsonian describes Rodriguez and other F-15s moving to protect a strike group southwest of Baghdad after intelligence about a suspected weapons storage facility, then detecting incoming MiG fighters at roughly 12 to 14 miles.
In that account, one MiG-29 gained a lock on Rodriguez, Underhill launched an AIM-7 Sparrow, and the missile struck the MiG-29. Rodriguez then visually identified the Iraqi MiG-29's shape and markings before the maneuvering fight descended toward the ground.

The source-backed Gulf War record supports classifying the Iraqi MiG-29 as an air-defense interceptor in this conflict. The public evidence used here documents Iraqi MiG-29s opposing coalition strike-protection and fighter operations, not Iraqi ground-attack use by the type.
