Direct proof of use
The AIM-7 Sparrow was used in the 1990 Gulf War as a U.S. fighter-launched, radar-guided air-to-air missile. The U.S. Air Force fact sheet states that Air Force fighter pilots used AIM-7 Sparrows in the Persian Gulf War and credits the missile with downing Iraqi fixed-wing aircraft and helicopters.
A CSIS-hosted Gulf War airpower chapter gives a narrower F-15C-centered count, stating that F-15Cs shot down Iraqi aircraft with AIM-7 radar-guided missiles and AIM-9 infrared-guided missiles. The same chapter says AIM-7 radar-guided missiles accounted for more than 40 percent of coalition air-to-air kills and that many of those kills were beyond visual range.

Timeline
On January 17, 1991, U.S. Air Force F-15C crews opened the coalition air-to-air record with AIM-7 Sparrow engagements against Iraqi aircraft. A Kadena Air Base history article describes Marine Capt. Charles Magill, flying an Air Force F-15C on exchange duty, firing AIM-7 Sparrows at an Iraqi MiG-29 during the second day of the war.
Through the air campaign, AIM-7s remained part of the F-15C air-superiority package. The CSIS chapter attributes 23 F-15C kills to the AIM-7 and describes the missile's role in the first war where beyond-visual-range air combat was a major factor.

Narrative
The documented Gulf War role was air-to-air interception by coalition fighters, especially U.S. Air Force F-15Cs operating with AWACS support and rules of engagement built around hostile identification. The missile was used against Iraqi combat aircraft and helicopters rather than in a ground-attack role.
Public sources use slightly different aggregate counts because they group kills by aircraft, missile, or service in different ways. The Air Force fact sheet gives the broad official Sparrow total for the Persian Gulf War, while the CSIS chapter separates F-15C kills and missile firings. Both directly support AIM-7 Sparrow use by U.S. fighter pilots in the 1990 Gulf War.
